We practically live on this salad during the summer – I suppose it’s a variation of Salade Nicoise, but really, we just throw together a few things that are already in the pantry or easy to get at the corner market.
Mesclun or Spring Mix
cold hard boiled eggs, quartered
cold cooked red skin potatoes, in bite sized pieces
good tomatoes, in bite sized pieces
canned tuna
Dressing
5 tablespoons extra virgin olive oil
2 tablespoons lemon juice
a dollop of dijon mustard
sea salt and fresh ground pepper to taste
Shake dressing ingredients together in a jar, and allow each individual to pour over their salad.
I serve this with baguette and lots of icy lemon water.
